Easy Amazing Paleo Chocolate Chip Cookies

PERFECTION! Crunchy edge, chewy and soft centered Paleo Chocolate Chip Cookies that all my kids, workout buddies and hubby LOVE!

15 minutes Preparation Time

12 minutes Bake Time

Pre-heat oven to 350 F.

Makes about 8 4-5 inch cookies 1/2 in thick.

Ingredients:

3/4 Cup Almond Flour

1/4 Cup Coconut Flour

3/4 Cup Coconut Sugar

1 teaspoon Baking Soda

1/4 teaspoon salt

1/3 Cup Almond Butter

1/4 Cup Grassfed Butter OR Coconut Oil (Soft NOT melted)

1 Egg

1 Tablespoon Vanilla

1/2 - 1 cup Chocolate chips (to taste)

In a smaller bowl, mix Almond and Coconut flours, baking soda and salt. In a separate larger bowl, mix butter (or oil), almond butter with coconut sugar until well combined. Slowly mix in the dry ingredients. Batter will be very very thick and may require a strong arm to mix. Put some chocolate chips on the side to add and balance the cookies once the cookies are formed on the paper / pan. Lay the dough out in the desired shape of the cookie (5 inches and about 1/2 inch thick) with about 2 inches space between each. Bake for 9-12 minutes. Should look soft in center and firmer on the outside a little darker.
